Two fluffy carrot cake cookies hugging a thick layer of cream cheese filling like it’s a full-time job. Sweet, spiced, and absolutely not interested in being eaten politely.

Ingredients 🛒
For the cookies:
- Carrots, grated2
- Plain flour1 cup
- Baking soda1 tsp
- Brown sugar½ cup
- Egg1
- Cinnamon½ tsp
- Vegetable oil¼ cup
For the filling:
- Cream cheese½ cup
- Butter, softened2 tbsp
- Icing sugar1 cup
Method ⏲️

Step 1: Prep & Preheat
Preheat oven to 180°C and line a baking tray. In a bowl, mix 1 cup grated carrot, ½ cup brown sugar, 1 egg, and ¼ cup oil. Stir until combined. Add 1 cup flour and ½ tsp cinnamon and mix into a soft batter.
Step 2: Shape & Bake
Spoon small rounds of batter onto the tray (about 1 tbsp each). Bake for 12–15 minutes until lightly golden. Let cool completely.
Step 3: Make Your Filling
While your batter is cooking, in a bowl, beat ½ cup cream cheese, 2 tbsp butter, and 1 cup icing sugar until smooth.
Step 4: Sandwich Together
Once your pies have completely cooled, spread or pipe filling onto one cookie and top with another to form a sandwich. They’re ready to be devoured!
