This salad is basically edible confetti. Sweet carrots meet tangy dressing in a party of textures that makes healthy suddenly feel naughty. Eat it for lunch, or whenever your life needs a little colour.

- Carrots8 carrots
- Spring onions, sliced2 spring onions
- Garlic, crushed1 tsp
- Apple cider vinegar2 tbsp
- Soy sauce2 tbsp
- Honey2 tsp
- Sesame seeds1 tbsp
Method ⏲️
Twist, twirl, and toss! Ribbons of carrot are dressed in zingy goodness and basically impossible to resist.
Step 1: Ribbon Your Carrots
Peel, then ribbon the carrots with a sharp peeler by shaving long, thin strips lengthwise.
Step 2: Make Your Dressing
Whisk together 1 tsp garlic, 1 tbsp apple cider vinegar, 2 tbsp soy sauce and 2 tsp honey.
Step 3: Time to Toss
Toss ribbons with dressing and 2 finely sliced green onions and let rest for 5-10 minutes to let the flavours meld.
Step 4: Sprinkle, Serve, Savour
Sprinkle with sesame seeds, then serve. Eat before anyone else can get to them.
