Method ⏲️
A bowl that does it all. Quick, hearty, and a little bit glam.
Step 1: Roast the Sweet Potato
Preheat oven to 200 °C. Toss 1 diced sweet potato with 1 tsp olive oil, salt, and pepper. Roast for 20 minutes, or until golden and tender.
Step 2: Cook Beef
Heat a non-stick pan with the remaining 1 tsp olive oil. Add 150 g beef mince and cook over medium-high heat for 5–6 minutes, breaking it up with a spoon until browned all over. Stir through 1 tbsp taco seasoning and ½ tbsp tomato paste with a splash of water, then cook for another 2 minutes until the beef is coated and fragrant.
Step 3: Build the Bowl
Place your diced roasted sweet potato and beef mince into a bowl. Add ½ cup of cottage cheese, slice your ½ avocado into thin pieces and place on top with a 1 tbsp drizzle of honey. Sprinkle chilli flakes if you’re feeling fiery.
