- Frozen pork dumplings (or your fave)750 g
- Mixed stir-fry vegetables 400 g
- Garlic, minced1 clove
- Fresh ginger, grated1 tsp
- Soy sauce2 tbsp
- Red curry paste2½ tbsp
- Coconut milk400 mL
- Chopped spring onionTo finish
- Sesame seedsTo garnish
- Cooked rice, to serveOptional
Method ⏲️
Lazy-weekend magic with a golden twist. Crispy dumplings all baked on one tray with sesame and spring onions for a fuss-free flavour adventure.
Step 1: Prepare Your Curry Base
Preheat oven to 200 °C. In a large, deep baking tray, pour in 400 mL coconut milk, 2½ tbsp red curry paste and 2 tbsp soy sauce and whisk well.
Step 2: Add In Vegetables
Toss in 400 g mixed vegetables, 1 clove minced garlic and 1 tsp grated ginger.
Step 3: Line Up the Dumplings
Then add 750 g of frozen dumplings (no need to thaw), lining them up nicely in the tray. Gently coat them in the curry mixture.
Step 4: Time To Cook
Bake for 15-20 minutes, or until dumplings are cooked through and lightly golden at the edges. Remove from the oven and sprinkle with chopped spring onion and sesame seeds. Serve hot and dive straight in! Add rice if you please.
