- Marshmallows, chopped2 cups
- White chocolate chips1 cup
- Toasted desiccated coconut½ cup
- Crushed Scotch Finger biscuits½ cup
Method ⏲️
Crunchy, chewy, chocolatey and dangerously delicious. Mix and melt your way to a festive rocky road packed with pavlova, marshmallows, biscuits, and coconut!
Step 1: Mix All the Good Stuff
Line a small slice tin with baking paper. In a large bowl, combine the bite-sized pavlova pieces, 2 cups of marshmallows chopped in half, ½ cup of crushed biscuits and ½ cup of toasted coconut.
Step 2: Melt Your Chocolate
Gently melt 1 cup of white chocolate chips in the microwave (15-20 second bursts, stirring between each).
Step 3: Coat Everything in Chocolatey Bliss
Pour the melted chocolate over the mixture and stir until everything is coated evenly.
Step 4: Chill & Slice to Perfection
Tip into the prepared tin, press down lightly and refrigerate for 1–2 hours until set. Slice into squares to serve.
