Method ⏲️

Think cake meets cookie. Peaches go down, dough goes on top. Bake it, flip it. Your new favourite treat will be ready in no time.

Step 1: Mix The Dough

Firstly, preheat your oven to 180 °C. Then, in a bowl, mix 30 g unsalted butter and 50 g caster sugar. Beat in 1 egg and ½ tsp vanilla extract. Fold through 150 g plain flour and 1 tsp baking powder until you’ve got a soft dough. Set aside.

Step 2: Caramelise the Base

Line a baking tray. Sprinkle over 50 g brown sugar and drizzle with 30 g melted unsalted butter to create a caramelised layer.

Step 3: Add the Peaches

Drain your 825 g can of peach slices and lay them neatly on top of the sugar-butter mix. About 2 slices per cookie.

Step 4: Bake & Flip

Spoon the cookie dough over the peaches. Bake at 180 °C for 15 minutes, or until golden. Cool for a few minutes, then flip for the big reveal: gooey peach on a caramelised base, golden cookie on top.

Add a scoop of vanilla ice cream to take these to the next level. Delicious!
