- Sriracha Hot Sauce1 tbsp
- Garlic, crushed½ tsp
- Soy sauce2 tbsp
- Ginger, crushed½ tsp
- Vegetable stock cube1 cube
- Coconut milk¼ cup
- Spring onion, sliced2 spring onions
- Lime wedges1 lime
- Egg, medium boiled (Optional)2
- Roasted peanuts (Optional)2 tbsp
- Sesame seeds (Optional)1 tsp
Method ⏲️
Noodles, peanut butter, and a kick of heat collide in a bowl that’s equal parts cozy and chaos. Let’s get into it.
Step 1: Make Your Mixture
In a small bowl, whisk 2 tbsp peanut butter, 1 tbsp sriracha, ½ tsp crushed garlic, ½ tsp crushed ginger, 2 tbsp soy sauce, and a splash of water until smooth.
Step 2: Stir It All Together
In a pot over medium heat, sauté 1 finely sliced spring onion for 1 minute. Add 250ml water, 1 stock cube and ¼ cup coconut milk and bring to a gentle simmer. Slowly whisk in the peanut butter mixture until the broth is emulsified and creamy.
Step 3: Cook Your Noodles
Add noodles (add the included seasoning packets for extra flavour or save for another time) and simmer for 2-3 more minutes, until noodles are cooked. Taste and adjust spice, acidity and salt to taste. In the meantime, finely chop 2 tbsp roasted peanuts.
Step 4: Time to Enjoy
Serve in a bowl with a medium boiled egg if desired, and top with chopped roasted peanuts, a sprinkle of sesame seeds, and squeeze over the juice of ½ lime.
