Fresh, light, and scroll-worthy. These little rolls take smoked salmon and cream cheese, wrap them in zucchini ribbons, and deliver the easiest bite-sized snack with a glow-up. Toss in baby capers for little pops of salty goodness.

Method ⏲️

Roll, chill, done. This one’s almost too easy.

Step 1: Slice Zucchini

Using a veggie peeler or mandolin, slice 3 zucchinis lengthways into thin ribbons.

Step 2: Mix Filling

In a small bowl, combine 250 g cream cheese with 1 tsp lemon juice and a crack of black pepper. Stir until smooth.

Step 3: Fill & Roll

Spread a thin layer of cream cheese mixture over each zucchini ribbon. Add a strip of smoked salmon (from the 150 g) on top, then roll tightly into bite-sized spirals.

Step 4: Chill & Serve

Arrange on a plate and chill in the fridge for 10 minutes before serving to help them hold their shape. Serve as a snack or party starter. For extra tang, add 2 tbsp of baby capers on top.
