- Lebanese cucumber6
- Salt½ tsp
- Garlic, minced2 cloves
- Apple cider vinegar1½ tbsp
- Sesame dressing2 tsp
- Sesame seeds1 tbsp
- Spring onions, sliced2
- Coriander, roughly chopped2 tbsp
- Chilli flakesOptional
Method ⏲️
Crisp cucumber tossed in a punchy sesame dressing.
Step 1: Smash Your Cucumbers
Smash 6 cucumbers with the flat side of your knife or a rolling pin until they split. Chop your cucumber into bite-sized diagonal pieces and pop them into a bowl.
Step 2: Salt & Drain
Sprinkle ½ tsp salt over your cucumber and toss well. Leave it for 10 minutes so your cucumber can release extra liquid, then drain off the water really well.
Step 3: Mix Your Dressing
In a small bowl, stir together 2 cloves minced garlic, 1½ tbsp apple cider vinegar and 2 tsp sesame dressing.
Step 4: Toss It Together
Add 1 tbsp sesame seeds, 2 sliced spring onions and 2 tbsp coriander to your cucumber. Pour over your dressing, add chilli flakes if you like, then toss and serve straight away for maximum crunch.
