Ingredients 🛒

  • Apples, peeled, cored and diced into 1 cm cubes500 g
  • Lemon juice1 tbsp
  • Caster sugar½ cup
  • Water1 tbsp
  • Cinnamon½ tsp
  • Egg whites2

Method ⏲️

Warm apple pots topped with golden baked meringue.

Step 1: Stew your apples

Preheat your oven to 180°C. Add 500 g diced apples, 1 tbsp lemon juice, ¼ cup caster sugar, 1 tbsp water and ½ tsp cinnamon to a saucepan. Cook for 10 minutes until your apples are soft and jammy.

Step 2: Fill your pots

Spoon your apple mixture into 4 small ramekins, dividing it evenly. Set your pots on a baking tray so they're ready for their fluffy topping.

Step 3: Whisk your meringue

Beat 2 egg whites in a clean bowl until soft peaks form. Gradually add the remaining ¼ cup caster sugar, beating until your meringue is thick, glossy and holding stiff peaks.

Step 4: Top & bake

Spoon your meringue over each ramekin, spreading it right to the edges. Bake for 15 minutes until golden on top, then serve warm and let everyone fight over the crispiest lid.
