- Tomatoes, halved1.5 kg
- Olive oil3 tbsp
- Onion, diced1
- Garlic, minced4 cloves
- Vegetable stock4 cups
- Basil1 cup, packed
- Thyme1 tsp
- Cream¼ cup (Optional)
- SaltTo taste
- PepperTo taste
Method ⏲️
A smooth roasted tomato soup finished with fresh basil.
Step 1: Prep & roast
Preheat your oven to 200°C. Arrange 1.5 kg halved tomatoes on a tray, drizzle with 2 tbsp olive oil, season with salt and pepper, then roast for 40-45 minutes until soft and a little charred.
Step 2: Cook your base
Heat 1 tbsp olive oil in a large pot over medium heat. Cook 1 diced onion for 5 minutes, then add 4 minced garlic cloves and 1 tsp thyme. Stir for 1 minute until fragrant.
Step 3: Simmer together
Add your roasted tomatoes and all their juices to the pot with 4 cups vegetable stock. Bring your soup to a simmer and cook for 15 minutes so all the flavors can get friendly.
Step 4: Blend & finish
Add 1 packed cup basil and blend your soup until smooth. Stir through ¼ cup cream if using, then season with salt and pepper to taste. Ladle it up and get dunking while it’s hot!
