What if the sauce was just... onions? Slow-cooked until golden and sweet, then tossed through spaghetti with Parmesan and a little pasta water magic. Turns out that's all you need.

- Brown onion, thinly sliced4 large
- Butter2 tbsp
- Olive oil2 tbsp
- Garlic, minced3 cloves
- Chilli flakes¼ tsp
- Spaghetti400 g
- Parmesan, finely grated, plus extra to serve½ cup
- Parsley, chopped2 tbsp
- SaltTo taste
- PepperTo taste
Method ⏲️
Spaghetti tossed through slow-cooked caramelised onions and a silky parmesan sauce.
Step 1: Start your onions
Melt 2 tbsp butter with 2 tbsp olive oil in a large deep-frying pan over medium heat. Add your thinly sliced onions and a good pinch of salt. Stir to coat, then cook for 10 minutes until softened.
Step 2: Low and slow
Reduce the heat to medium-low and keep cooking, stirring every few minutes, for another 30–35 minutes until your onions are deeply golden, caramelised, and sticky. If they start to catch, splash in a little water and scrape up those browned bits.
Step 3: Add garlic and cook your pasta
Stir 3 minced garlic cloves and ¼ tsp chilli flakes into your onions and cook for 30 seconds until fragrant. Meanwhile, cook 400 g spaghetti in a large pot of well-salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
Step 4: Bring it together
Add your drained spaghetti to the pan with the onions. Pour in ½ cup of the reserved pasta water and toss over medium heat. Add ½ cup grated Parmesan and keep tossing, adding more pasta water a splash at a time until the sauce is silky and coats every strand.
Step 5: Serve & enjoy!
Season generously with salt and pepper, then scatter over 2 tbsp chopped parsley and extra Parmesan. Pile into bowls and dig in while it's hot.
