An Earl Grey twist on the classic tiramisu β no coffee in sight. Each layer is steeped in fragrant Earl Grey and brightened with lemon zest, finished with a light, fluffy cream. It's easy to make ahead, perfect for sharing, and guaranteed to impress a crowd.

- Earl Grey tea bags4
- SugarΒ½ cup
- Egg yolks3
- Cream cheese, room temperature250 g
- Cream, cold1 cup
- Vanilla extract1 tsp
- Lemon zest1 tsp
- Madeira cake1 pack

Earl grey tea-soaked cake, layered with cream and a hint of lemon.
Step 1: Brew your tea
Add 2 cups hot water to a bowl or jug with 3 Earl Grey tea bags, 2 tbsp sugar and 1 tsp lemon zest. Steep for 10 minutes until strong, then remove the bags and leave your tea to cool.
Step 2: Whip your filling
Separate your three egg yolks. In a large mixing bowl, beat them in with the remaining sugar until pale. Take your fourth earl grey tea bag and release the tea leaves into a mortar and pestle to grind into a powder or alternatively chop finely as possible with a sharp knife. Add 250 g cream cheese, 300 ml cream, 1 tsp vanilla extract, the grounded earl grey tea leaves into the mixing bowl and a pinch of salt, then beat until thick and smooth.
Step 3: Layer it up
Prep the cake layers by slicing the Maderia cake into 3 slices longways about 2.5cm thick. Lay the first slice of cake down into a glass tray then evenly pour 1/3 of the cooled earl grey tea onto the cake. Let it soak into the cake for before spreading 1/3 of your cream. Repeat with the remaining 2/3 of the Maderia and the rest of the cream leaving enough cream to cover the top layer.
Step 4: Chill & serve
Cover your tiramisu and chill for at least 4 hours, or overnight if you can wait. Finish with extra lemon zest, then scoop in and enjoy every tea-soaked layer.
