- Greek yoghurt2 cups
- Honey2 tbsp (plus extra to drizzle)
- Vanilla extract1 tsp
- Salt1 pinch
- Strawberries1 punnet
Method โฒ๏ธ
Creamy frozen yoghurt bark topped with fresh strawberries.
Step 1: Prep your tray
Line a small tray or baking dish that fits in your freezer with baking paper, letting the edges hang over so you can lift your bark out easily.
Step 2: Mix it up
In a bowl, stir 2 cups Greek yoghurt, 2 tbsp honey, 1 tsp vanilla extract and 1 pinch salt until your mixture is smooth. Give it a taste, it should be a little sweeter than you think.
Step 3: Load it up
Spread your yoghurt mixture onto the lined tray in an even layer about 1 cm thick. Halve your strawberries and trim the tops, then press them gently into the yoghurt so they stick. Drizzle with a little extra honey, or a lot.
Step 4: Freeze & crack
Freeze your bark for 3-4 hours or until firm. Let it sit for 1-2 minutes, then break or cut into 8-12 pieces and tuck in.
