  • Green apples, washed and thoroughly dried6
  • Bamboo skewers or fork6
  • Brown sugar2 cups
  • Thickened cream1 cup
  • Butter4 tbsp
  • Water¼ cup
  • Vanilla extract1 tsp
  • Salt½ tsp
  • Dark chocolate chips150 g

Method ⏲️

Whole caramel-dipped apples decorated with a dark chocolate spiderweb pattern.

Step 1: Prep your apples

Line a tray with baking paper. Push bamboo skewer or fork firmly into the top of each dry apple where the stem is. It's really important your apples are completely dry. Any moisture will stop the caramel sticking.

Step 2: Make your caramel

Combine 2 cups brown sugar, 1 cup cream, 4 tbsp butter, ¼ cup water, and ½ tsp salt in a medium saucepan over medium heat. Stir constantly until the butter melts and the sugar dissolves. Once bubbling, stop stirring and let it cook until it thickens and turns a deep golden colour, about 10-12 minutes. Remove from heat and stir in 1 tsp vanilla extract. Let it cool for 5 minutes to thicken slightly before dipping.

Step 3: Dip your apples

Holding each apple by its fork or bamboo skewer, swirl it in the caramel until evenly coated. Let the excess drip back into the pan, then scrape the bottom gently. Place onto your lined tray and refrigerate for at least 30 minutes until set.

Step 4: Make your web

Melt 150 g dark chocolate in a microwave-safe bowl in 30-second bursts, stirring between each, until smooth. Transfer to a zip-lock bag or piping bag and snip a tiny corner off. Pipe 7-8 vertical lines down each apple from top to bottom, then connect them with small, curved arcs going across to form your web. Chill for 15 minutes until set.

Step 5: Serve & enjoy!

Pull them out of the fridge when you're ready to serve. They'll keep chilled for up to 8 hours, but honestly, they won't last that long.
