- Sweet potato2
- Turkey mince500 g
- Corn kernels1 can
- Ricotta cheese2 cups
- Avocado1
- Spring onion3
- Coriander½ cup
- Sriracha sauceTo taste
Method ⏲️
Roasted sweet potato bowls loaded with all the toppings you love.
Step 1: Roast Your Potatoes
Preheat oven to 200°C and line a tray with baking paper. Slice sweet potatoes in half and place on tray, drizzle olive oil on top and bake for 30 minutes.
Step 2: Prep Your Fillings
Cook 500 g turkey mince on medium heat and set aside. Finely chop ½ coriander and 3 spring onions. In a small bowl, assemble 2 cups ricotta cheese, 1 can corn kernels and all your chopped ingredients.
Step 3: Assemble Together
Remove sweet potatoes from the oven. Chop your avocado into thin slices. Assemble your turkey mince, fillings, and avocado slices and place on top of your potatoes. Garnish with sriracha sauce. Devour and enjoy!
