- Salmon fillets, skin off, cut into 3 cm cubes460 g
- Zucchini, sliced into thick rounds1
- Red onion, cut into chunks1
- Olive oil¼ cup
- Lemon zest1 tsp
- Lemon juice2 tbsp
- Garlic, minced3 cloves
- Oregano2 tsp
- Ground cumin1 tsp
- Smoked paprika1 tsp
- Salt1 tsp
- Black pepper½ tsp
Method ⏲️
Lemony salmon skewers with zucchini and onion, cooked fast on an oven baking tray.
Step 1: Mix your marinade
If you're using wooden skewers, soak them in water. In a large bowl, whisk ¼ cup olive oil, 1 tsp lemon zest, 2 tbsp lemon juice, 3 minced garlic cloves, 2 tsp oregano, 1 tsp cumin, 1 tsp smoked paprika, 1 tsp salt and ½ tsp black pepper.
Step 2: Coat your skewers
Add 460 g salmon, 1 sliced zucchini and 1 red onion to your bowl. Toss gently to coat, then leave everything to marinate for 15 minutes. Thread your salmon, zucchini and onion onto skewers, alternating as you go.
Step 3: Grill your kebabs
Preheat your oven grill to high and line a baking tray. Arrange your skewers in a single layer and place them under the grill for 4-5 minutes. Turn your kebabs, then grill for another 4-5 minutes until your salmon is just cooked through.
Step 4: Serve & enjoy!
Lift your salmon kebabs straight onto plates and spoon over any juices from the tray. Serve them while they're hot and let everyone race you to the last skewer.
