- Frozen dumplings400 g
- Soy sauce2 tbsp
- Vegetable oil1 tbsp
- Garlic, minced3 cloves
- Ginger, grated1 tbsp
- Chicken bone broth1.5 L
- Spring onions, sliced4
- Carrots, thinly sliced2
- Baby spinach60 g
- SaltTo taste
- Chilli flakesTo serve
Method ⏲️
A cosy ginger-garlic broth loaded with dumplings and greens.
Step 1: Start your broth
Heat 1 tbsp vegetable oil in a large pot over medium heat. Add 3 cloves minced garlic, 1 tbsp grated ginger and most of your 4 sliced spring onions, saving a little for serving. Cook for 1 minute until fragrant.
Step 2: Add your soup base
Pour in 1.5 L chicken bone broth, add 2 tbsp soy sauce and 2 thinly sliced carrots. Bring your soup to the boil, then simmer for 5 minutes until your carrots start to soften.
Step 3: Cook your dumplings
Add 400 g frozen dumplings to your pot and cook according to packet instructions, so your dumplings are heated through and bobbing about happily.
Step 4: Finish & serve
Stir through 60 g baby spinach and let it wilt for 1 minute. Season your soup with salt to taste, then ladle into bowls and top with your reserved spring onion and chilli flakes. Grab a spoon and get snug!
