Method ⏲️

Step 1: Prep & Preheat
Preheat your oven to 180°C and lightly grease a 20-25 cm oven-safe skillet. In a large bowl, beat together 150 g softened butter and ¾ cup brown sugar until light and creamy. Mix in 1 egg and 1 tsp vanilla extract until combined. Fold in 1¼ cups plain flour, ½ tsp baking soda, and ¼ tsp salt until a soft cookie dough forms.
Step 2: First Bake
Press your cookie dough evenly into the base of your skillet. Bake for 20 minutes until just set but still soft in the centre. It will bake more later so don't worry if it looks a little underdone.
Step 3: Cook Your Apples
While the cookie bakes, toss your diced apples with 2 tbsp brown sugar, 1 tsp cinnamon, and 1 tbsp lemon juice in a small saucepan over medium heat. Cook for 3-4 minutes until the apples just start to soften and the liquid thickens slightly. Set aside.
Step 4: Make Your Crumble
In a bowl, combine ½ cup plain flour, ½ cup rolled oats, ¼ cup brown sugar, ½ tsp cinnamon, and ¼ tsp salt. Pour in 3 tbsp melted butter and mix with a fork until chunky clumps form.
Step 5: Layer & Finish
Spoon your sticky apples over the par-baked cookie base, then scatter your crumble on top. Return to the oven for 30-35 minutes until the crumble is golden and crisp. Drizzle with caramel sauce and serve warm with a big scoop of vanilla ice cream. Get it while it's hot!
