Ingredients 🛒
For the brownies:
- Dark chocolate200 g
- Butter150 g
- Caster sugar1 cup
- Brown sugar½ cup
- Eggs3
- Vanilla extract1 tsp
- Plain flour1 cup
- Salt½ tsp
For the coating:
- Dark chocolate100 g
- Icing sugar2 cups
- Water, boiling½ cup
- Desiccated coconut2 cups
Method ⏲️
Fudgy brownies dipped like lamingtons and rolled in coconut.
Step 1: Prep & preheat
Preheat your oven to 180°C and line a 20 cm square tin with baking paper. Melt 200 g dark chocolate chips and 150 g butter in a heatproof bowl set over a saucepan of barely simmering water, stirring until smooth and keeping the base of the bowl clear of the water. You can also microwave them in 30 second bursts, stirring between each. Let your mixture cool for 5 minutes.
Step 2: Mix your batter
Stir 1 cup caster sugar and ½ cup brown sugar into your chocolate mix. Add 3 eggs, one at a time, then 1 tsp vanilla extract. Fold in 1 cup plain flour and ½ tsp salt.
Step 3: Bake your brownie
Pour your batter into the tin and smooth the top. Bake for 25 minutes, until the edges are set and the centre still gives you a few moist crumbs. Cool completely, then chill for 30 minutes.
Step 4: Dip & roll
Cut your brownie into 16 squares. Melt 100 g dark chocolate chips, then whisk it into 2 cups icing sugar with ½ cup boiling water until your icing is smooth and glossy. Place 2 cups desiccated coconut in a shallow bowl.
Step 5: Let them set
Working one square at a time, drop a brownie into your icing and turn it with two forks until coated. Lift it out, let the excess drip back into the bowl for a few seconds, then transfer to your coconut and roll to cover all sides. Set on a wire rack and repeat with the rest. Leave for 30 minutes until firm, then grab a cuppa and get stuck in.
