- Butter225 g
- Brown sugar1 cup
- Caster sugar½ cup
- Egg1
- Egg yolk1
- Vanilla extract2 tsp
- Plain flour2 ½ cups
- Cornflour1 tsp
- Baking soda1 tsp
- Salt½ tsp
- Milk2 tbsp
- Dark chocolate1 ½ cups
- Salt flakesTo serve
Method ⏲️
Chewy choc cookies with nutty brown butter and melty chocolate pockets.
Step 1: Brown your butter
Add 225g butter to a light-coloured saucepan over medium heat. Cook, stirring, for 5-7 minutes until golden with brown specks and a nutty smell. Pour into your bowl, bits and all, then cool for 10-15 minutes.
Step 2: Mix your dough
Whisk 1 cup brown sugar and ½ cup caster sugar into your brown butter. Add 1 egg, 1 egg yolk and 2 tsp vanilla extract. Stir in 2½ cups plain flour, 1 tsp cornflour, 1 tsp baking soda, ½ tsp salt and 2 tbsp milk. Chop the dark chocolate into small pieces and fold it through the mixture.
Step 3: Chill & scoop
Cover your dough and chill for 30 minutes. Preheat your oven to 180°C and line 2 trays. Scoop 2 tbsp portions of dough onto your trays, leaving space for spreading.
Step 4: Bake your cookies
Bake your cookies for 11-12 minutes, until the edges are golden, but the centres still look a little soft. Cool on the tray for 5 minutes, sprinkle with salt flakes if you like, then grab one while the choc is still gloriously melty. For quality control... of course.
