- Garlic bulb, whole1
- Olive oil1 tbsp
- Butter1 tbsp
- Garlic, minced3 cloves
- Soy sauce1 tbsp
- Brown sugar1 tbsp
- Red pepper flakes1 tsp
- Mayonnaise1 tbsp
- Spring onions, finely sliced2
- Spiced ham150 g
Method ⏲️
Spicy roasted garlic Shin ramyun with a fire butter sauce and tasty toppings.
Step 1: Roast the garlic bulb
Preheat oven to 200°C. Slice the top off 1 whole garlic bulb to expose the cloves, drizzle with 1 tbsp olive oil, wrap in foil, and roast for 30 minutes until golden and soft. Once done, squeeze the roasted garlic out of the skin and set aside.
Step 2: Make the garlic broth
Boil 500 ml water and add the squeezed roasted garlic. Mash it directly into the water and stir until the water turns golden. Add both Shin Ramyun seasoning packets and stir well.
Step 3: Cook the noodles
Add the Shin Ramyun noodles to the garlic broth and cook for 2-3 minutes over the stove until al dente. Do not overcook; you want them to be chewy.
Step 4: Make the fire butter sauce
While the noodles cook, melt 1 tbsp butter in a pan over low heat. Add 3 minced garlic cloves, 1 tbsp soy sauce, 1 tbsp brown sugar, and 1 tsp red pepper flakes. Stir fry for 1-2 minutes until fragrant and the sugar has dissolved.
Step 5: Toss & sauce
Drain most of the broth from the noodles, leaving enough to coat your noodles. Add the noodles to the butter saucepan and toss until fully coated, then squeeze 1 tbsp of mayonnaise to further coat.
Step 6: Top & serve
Transfer to a bowl and finish with 150 g of diced spiced ham, pan-fried until golden if you want that crispy edge and a fresh scatter of spring onions. Dig in while it's hot and let the spice do the talking.
