- Scotch Finger biscuits1 packet
- Unsalted butter, melted125 g
- Condensed milk395 g
- Golden syrup2 tbsp
- Milk chocolate200 g
Method ⏲️
Crunchy biscuit base meets soft caramel and a glossy chocolate top in this Aussie classic with a twist.
Step 1: Prep your tin
Preheat your oven to 180 °C. Line a slice tin with baking paper and arrange Scotch Finger biscuits tightly across the base.
Step 2: Make the caramel
In a saucepan, melt 125 g butter, 2 tbsp golden syrup and slowly add 1 can condensed milk over low heat, stirring for 5-8 minutes or until, dense, thick and golden. Be very careful not to burn. Slow is key. The caramel should be thick enough to coat the spoon and hold its shape for a moment when stirred. If it's too runny, continue cooking for a little longer.
Step 3: Pour & chill
Pour caramel over biscuits and spread evenly. Place into the oven and bake for 10 minutes. Remove from oven and allow to cool.
Step 4: Add chocolate top
Melt 200 g milk chocolate in the microwave in 30 second bursts then spread over caramel. Refrigerate for 1–2 hours until set and slice.
