  • Marinated chicken wings, cooked and shredded2 cups
  • Ricotta cheese½ cup
  • Greek yogurt¼ cup
  • Barbeque sauce⅓ cup
  • Garlic powder½ tsp
  • SaltTo taste
  • PepperTo taste
  • Large white wraps4
  • Mozzarella1 cup
  • Corn chips2 cups
  • Thousand Island dressing4 tbsp
  • Iceberg lettuce, shredded2 cups
  • Tomato, diced2
  • Olive oil1 tbsp

Method ⏲️

Spicy buffalo chicken wraps with a creamy filling and crunchy center.

Step 1: Prep your filling

Preheat your oven to 190°C. Bake your marinated wings on a tray for 30 minutes. While cooking, blend ½ cup ricotta cheese until smooth, then stir it with ¼ cup Greek yogurt, ⅓ cup barbeque sauce, ½ tsp garlic powder, salt and pepper.

Step 2: Shred your chicken

Once slightly cooled, shred the chicken off your wings with a fork. Take your shredded chicken and fold through your sauce, ensuring the meat isn’t too hot to cook your sauce!

Step 3: Layer your wraps

Lay out 4 large white wraps. Add ½ of your chicken mixture to each center, top with ¼ cup mozzarella, ½ cup corn chips, 1 tbsp Thousand Island dressing, ½ cup lettuce and diced tomato. Don’t overfill your wraps or they won’t hold their shape.

Step 4: Fold them up

Fold the edges of each wrap over your filling, making tight pleats as you go until your wraps are sealed. Press them down gently so they hold their shape.

Step 5: Cook until golden

Heat a little olive oil in a non-stick pan over medium heat. Cook your wraps seam-side down for 2-3 minutes on each side until golden and crisp, then slice and get stuck in while the crunch is loud.
