- Chicken thighs, cut into bite-size pieces700 g
- Cornflour¼ cup
- Garlic powder1 tsp
- Salt½ tsp
- Black pepper¼ tsp
- Olive oil2 tbsp
- Orange juice½ cup
- Soy sauce3 tbsp
- Brown sugar2 tbsp
- White vinegar1 tbsp
- Garlic, minced2 cloves
- Ginger, grated1 tsp
- Orange zest1 tsp
- Broccoli, chopped2 cups
- Jasmine rice, cooked3 cups
- Spring onions, sliced2
Method ⏲️
Crispy chicken tossed in a sticky orange glaze with rice and broccoli.
Step 1: Prep your chicken
Toss 700 g chicken thighs with ¼ cup cornflour, 1 tsp garlic powder, ½ tsp salt and ¼ tsp black pepper until every piece is lightly coated.
Step 2: Cook your chicken
Heat 1 tbsp olive oil in a large pan over medium-high heat. Cook your chicken for 8-10 minutes, turning now and then, until golden and cooked through. Transfer to a plate.
Step 3: Make your sauce
In the same pan, add 1 tbsp olive oil, 2 cloves minced garlic and 1 tsp grated ginger. Stir for 30 seconds, then add ½ cup orange juice, 3 tbsp soy sauce, 2 tbsp brown sugar, 1 tbsp white vinegar and 1 tsp orange zest.
Step 4: Add your broccoli
Cut your broccoli into small, bite-sized florets. Add 2 cups to the pan and simmer for 3-4 minutes until bright green and just tender. Return the chicken to the pan and toss everything together until the sauce becomes sticky and evenly coats the chicken and broccoli.
Step 5: Build your bowls
Divide 3 cups cooked jasmine rice between 4 bowls, then spoon over your sticky orange chicken and broccoli. Finish with 2 sliced spring onions and then dig in while it’s glossy.
